Expected duration: 2-3 months
The Gist
The Assistant Brewer is responsible for cleaning and sanitizing fermentation vessels while simultaneously managing ancillary aspects of wort production, cellar work and area cleanliness and tidiness along with other duties in and around the Brewing Department.
What You'll Do
- Rinse, vent and CIP stainless steel unitanks
- Proper use of PPE and participation in company chemical training and safety seminars
- Perform chemical titrations and ATP swabs to ensure effective cleaning
- Clean out-of-place (COP) man-ways, racking ports and tank top assemblies
- Follow company SOP's and respond to out of specification parameters
- Handling of all raw materials (calcium sulfate, calcium chloride, food grade acids, grain in bulk, totes and bags, sugar, whirlfloc, etc)
- Weigh out precise quantities of various raw materials and deliver into an identified sub-container and associated brewing vessel (specialty malt hopper, big bag station, hop dosing vessel or brewing vessel); communicate duties to Brewer on shift
- Maintain the cleanliness and order of the cellars and brewhouses, including cleaning sinks & soaker tubs, outsides of brewing vessels, floors and walls, promptly sweeping up spilt grain and hops and proper storage of hoses, pump carts, clamps and other brewery equipment
- Manage and execute required daily yeast and cold trub removals (manual and with decanter centrifuge)
- Manage and execute required daily excess of yeast and cold trub (using fan press)
- Prepare, stage and execute daily requirement of dry hopping
- Responsible for receiving in bulk chemicals into storage tanks
- Other duties as assigned
What We're Lookin' For
- Willing to work weekends and evenings as needed, acceptance of varying and flexible schedules
- Strong interest in trends in production and flavors in the craft beer industry and the methods of their application in the Lagunitas brewhouse
- Ability to follow all company SOP's and work with little or no supervision once fully trained
- Punctual, reliable and able to work both independently and within a team
- Excellent organization, time management and problem-solving skills; works well under pressure
- Must be able to adapt to changes in the work environment and manage competing demands

Physical Requirements
- Comfortable lifting up to 55 pounds
- Extended periods of time standing, climbing
- Comfortable working in closed spaces
